About ChefSteps

ChefSteps is a Seattle cooking company known for bringing modernist technique to home cooks, and for the Joule sous vide circulator. Its videos are short, beautifully shot and precise, with temperatures and weights on screen and the full recipes on its website, many of them behind its Studio Pass subscription.

Burgers show off the method. Its most-watched burger video cooks patties sous vide before a quick sear, so they are done exactly as you like every time, and a whole Burger Class covers patties, buns and sides. The Ultimate Smash Burger uses a 60:40 beef-to-fat grind with salt, egg yolk and a little gelatin; a mushroom burger is bound with transglutaminase and casein; a high-tech veggie burger solves the texture problem. There are slider buns and trashy sliders, a White Castle-style copycat, a Texas smoked brisket burger with pitmaster Joe Yim and a fondue smash burger recreating the Touch Down Burger from a Tokyo diner.
