
Tingling Nashville Hot Chicken Sandwich
Emmy Squared’s hot chicken crosses Nashville with Sichuan: crispy breaded chicken in a Sichuan-Nashville hot coating, with radishes and Alabama white sauce on a toasted pretzel bun. The “tingling” is Sichuan pepper, which numbs as much as it burns, so the heat feels different from a straight cayenne hot chicken. The radishes and tangy white sauce cool it down. The story
Nashville hot chicken comes with a famous origin story: Thornton Prince, the tale goes, was served fried chicken loaded with pepper by a girlfriend tired of his late nights, liked it, and by the mid-1930s was selling his own version with his brothers in Nashville. Prince’s Hot Chicken Shack, run by his great-niece André Prince Jeffries since 1980, keeps it going. Emmy Squared, a New York pizza restaurant known for Detroit-style square pies, adds Sichuan pepper, whose numbing tingle is the signature of the cooking of China’s Sichuan province.
