This is the best-scoring burger in the video, and the reason is the ketchup. The burger itself is plain on purpose: a salted and peppered beef patty with cheddar, lettuce and three slices of tomato. The ketchup is made the old-school way, with real sugar instead of corn syrup.
Vinegar comes to a boil with allspice berries and cloves and steeps. Onion gets fried, crushed tomatoes go in and cook down for a long time, until all the water is gone, and then the spiced vinegar is strained in with the sugar. It comes out tangy and sharp, and you taste the clove right away. It goes on thick, straight onto the bottom bun. The burger scored 9.2. Make this ketchup at least once.
Ingredients
- 150 g ground beef
- Salt
- Black pepper
- 1 slice cheddar
- 1 large lettuce leaf
- 3 slices tomato
- 1 burger bun
- 100 ml vinegar
- 5 allspice berries
- 3 cloves
- 1 small onion
- 400 g crushed tomatoes
- 2 tbsp sugar
Recipe
- 1Start with the ketchup, which makes more than one burger needs. Bring the vinegar to a boil with the allspice berries and cloves, then let it steep.
- 2Finely chop the onion and fry it. Add the crushed tomatoes and cook them down for a long time, until all the water is gone.
- 3Strain the spiced vinegar into the tomatoes and stir in the sugar. Real sugar, no corn syrup.
- 4Make the patty wider than the bun, because it shrinks. Season it with salt and pepper, cook it, and put the cheddar on top.

- 5Build: bottom bun, lots of homemade ketchup, the patty with cheese, lettuce, 3 tomato slices, salt and pepper, top bun.
