About Sauce Stache
Sauce Stache is the channel of Mark Stache, a vegan cook who treats plant-based meat as a puzzle to be solved in a home kitchen. He reads ingredient lists, experiments with gums, starches and fats, and wrote a cookbook, Making Vegan Meat, on the techniques behind his recipes.
Burgers are his central project. He reverse-engineered the Impossible Burger 2.0 and later made a 35-cent version, tried to improve the new Beyond Burger, built a Beyond-style burger from carrots and one from just four ingredients, and made burgers from chickpeas, cauliflower and walnuts, seitan with fat pockets, and a leaf said to taste like beef and onion. He tested Beyond against Impossible against real beef with his dad, compared old and new Beyond Burgers and made vegan smash burgers, a vegan Big Mac and a Popeyes-style sandwich from Gardein patties.
